This week City Weekend sought out the best of Shanghai’s foie gras. Check out our top three below!
Jean Georges
There’s a good reason why this Jean Georges classic foie gras brûlé (RMB198) is so popular in both New York and Shanghai. It’s a dreamy bite of French elegance. Like a simple black dress that followed Coco Chanel’s advice, this goose liver terrine puts on just the right amount of accessories.
A golden wine gelée made with orange Muscat and rice vinegar rounds it out with acidity while toasted pistachio, chewy dried cherry and diced celery compose a medley of lovely textures.

Mr and Mrs Bund
The seared foie gras pomelo at Mr & Mrs Bund (RMB180) is our favorite dish of its kind in the city. Chef Paul Pairet takes our palate on a journey to Southeast Asia by pairing a fatty piece of seared duck liver and a slice of fresh pomelo with parsley, lemongrass and a dynamite lime glaze that brightens everything up.
This interesting blend of herbs and that piercing lime flavor form a perfect counterbalance to the star of the dish.

Roosevelt
Guilty and pleasure are two perfect words to describe the fried foie gras with truffle risotto at Roosevelt Sky Restaurant & Bar (RMB208). This plate of creamy goodness is exactly what we crave at the end of a tough workday.
The assertive presence of Parmesan and truffles creates a beautiful coating around each grain of rice while a piece of fatty goose liver sends the richness over the top. It takes comfort food to a whole new level …
