After three years of rotating COVID breakouts, quarantines and lockdowns around the world, peaking in China with a long zero-COVID era that only ended in December, this is the first year since 2019 when we can breathe a bit easier.

Baijiu is the planet’s most popular spirit, with some 20 billion bottles produced each year, but is little-known beyond China.

Bastien Ciocca is co-founder with Andrew Ho of Hope & Sesame, which counts two bars of that name in Guangzhou and Shenzhen.
